Man what have I been doing? Not blogging about all the goodies I've been consuming! I guess I am not the best at this blogging thing! I do share my photo's regularly on Facebook tho.

I had some apples that needed to be used so I figured, LET'S BAKE. That seems to be the solution to most of my obstacles . F*ck it, Bake it. My life usually consists of baking, eating or giving no cares. I was very worried at first being that the dough was soooo thick. I added an extra egg drizzled them with caramel, sprinkled them with brown sugar and HUURRAYY Autumn happiness exploding in my mouth. Explosions in your mouth are fun<--TWSS. LOL Dirty Girl.
This gluten Free baking life can be stressful, frustrating, money wasting, time consuming, yet in still the reward of discovering a new amazing recipe is worth all of the stress.

A little bit of randomness in my kitchen lately.
I made a HUGE breakfast for one of my friends and I on a Sunday Morning. I baked up some chocolate cookies, and then broiled them thinking the oven was off. Hence the name Boo Boo cookies. I made a Boo Boo and they kinda look like boo boo, but taste like chocolaty heaven.
Oh and those Dream cookies, those are crack. Literally. I think I ate the whole bag in 1 1/2 days. Paid for it running the other day. Last but not least who doesn't like Deviled Eggs in the summer. Well I do. Killed those too! (killed= did things to them in such a fast manor it should be illegal. I ate emm up!)

These lovely ladies were created special for me. I made them for my Birthday Party! For some Odd reason I thought that we would have plenty left over, I was wrong. They were gobbled up fast and in a hurry. All right before Roller Skating.

Summer Fun


This summer is turning out to be a good one. Being that we just recovered from a hellacious heat wave, were still going strong. I had company for a week and I enjoyed it very much. Though I can be some what of an organizational freak, it went well. The kids had plenty to do, and if they didn't the XBOX found plenty for them. One of my favorite memories so far this summer was our group trip to the fair. Ah the country side, the smell of the great out doors, long country roads, blue skies white fluffy clouds and ice cream. We all had a blast! We were 10 deep {meaning there was 10 of us in our crew} We all decided to take part in the Watermelon Eating Contest, of which Kim won 1st place. OMG it was hilarious. She just opened her mouth and swallowed. <--Ma'am!
The boys really didn't want any parts of it, but being the loving mothers we are, we made them. Of course their hearts weren't into it so they lost, TO A GIRL! Lol I don't think Emmanuel will be craving watermelon for a while. At the fair we got to see all the prized animals, pies and crafts. Being a small community fair there wasn't too much to see, but just enough to keep us occupied.
After the fair we all made our way to my new FAVORITE Ice Cream place Moo Thru! OMG the Ice Cream here is AMAZING! I think God himself blesses it before it enters your mouth. It's so creamy and yummy! They are totally natural and the cream comes from their pasture located right behind the store. The plus is they are Gluten Free! The down side they are allllllll the way out in Faquire County! Moo Thru is a hidden gem in the country side. I kinda like it this way. If they became a chain the taste would change, and so would my love for them.
The first time we went, I just got a single scoop with fudge. I was trying to be a good girl. The 2nd time we went I was prepaired. Gluten Free Oreo cookies and all. Yes I brought my own cookies to the Ice Cream Stand, ain't no shame in my game. Those cookies and my double scoop of Butter Pecan with hot Fudge drizzled on top was pure sugar/Ice Cream SIN! Good sin not bad sin if there is such a thing, the kind of sin that God would approve of, only if confession was done in the form of sit ups the next day. Trust me how ever many calories that over powered my ice cream was worth it. Down to the very last drop!
Now I have a new summer treat spot, and new memories with the best kid, and friends a girl could want.

EggCersizing my Addiciton

So I have been on this Egg fix lately.
I mean seriously eating eggs.
Deviled Eggs, Hard boiled Eggs,
then today I did the most amazing thing you can do to Eggs.
Put them in an Omelet.
Not just any Omelet.
A Mango Peach Salsa stuffed Omelet.
Oh and cheese, basil and 2 jalapenos.
Not the ones from my Garden yet, but soon.
I do need to share about that as well. I will post pictures.
It was heavenly!
Making Omelets can be somewhat of a science.
You have to make sure the egg can handle all the stuffings in the middle.
I like to stuff them!
Ha, ha, giggle giggle.
I love the fact that I can just go out to my deck, and there is fresh basil.
Makes me feel all earthly!
like I am doing what my ancestors did.
Lived off God. AKA Nature!
I know this cooking thing just comes naturally to me, and I can't wait till
I can share my gift with you.

It's a Baby Celebration


This past weekend was a Gluten Free feasting frenzy! I hosted my Best friend of many, many, many years, baby shower. It was amazing! Almost EVERYTHING on the menu was Gluten Free Lil Bee. Other than her special ordered Panda Dos Gluten cake (yuck) everything was gluten free. of course no one could tell the difference, being I am such and amazing cook, and cooking Gluten free is easy.
Everything was so colorful and matched with her Safari theme. We had animals, fruit, hamburgers hot dogs and goodies galore. Being that we were both so busy we didn't really get enough pictures to justify how glorious this party was.
We even sent the guests home with Gluten Free Fruity Bars. Of which I ate about 10 over the course of the weekend. Horrible addiction to them I have. Currently speaking with a doctor about it. Helping with this baby shower made me realize that I love to cook, I love to feed people and I love love love for people to love my food. Love and food what more could a girl want. The prep was calming and a chance for me to meditate on my love of what I do. I love how everything matched and all colors were coordinated, which should always be matching. Everyone had a great time. We all pigged out. The Mama to be was very satisfiyed with what I produced. Can't wait to meet her Panda. Love you Debra Lyn !!!

I found myself in the kitchen AGAIN this weekend. I know that this is because this is where I love to be, other than the pool. Being that the pool isn't open just yet, I will continue to bake.
I am not a huge cheese cake fan, I figured I would tackle making one. To my surprise I loved it. The Crust was HEAVENLY! Perfect treat for a May Day!

Thought I would take some time and share some of the recipes I have worked on over the past couple months. I have to say that I am somewhat of a food picture taking WHORE. Yes I said WHORE. No I am not a woman of the night I am just goin hard in the paint<--didn't even feel right typing it. You get the point. I click a picture of almost everything that goes in my mouth. (that's what she said)
Ok enough with the POP culture, back to my goodies.
Whenever I make pizza, it's usally not the "normal"cheese and pepperoni. I am a freak for all kinds of different toppings.
This one is my South West BBQ Chicken. Though VERY messy
very yummy, and worth a finger lick or two.

we will call that one a TESTER.






Red Velvet Smurf Cake! It's funny what living in the mentality of a child can do for you from
time to time. Again I wanted to Jazz it up again. I thought, Oh food coloring, ahhh frosting.. mix mix mix.. PRETTY COLORS ..hence Smurf Velvet.



This next guy right here was a greasy deep dish slice of HEAVEN. SERIOUSLY! This was like a Philly Cheese Steak meets Cheese on steriods. There was mushrooms, onions, ground beef,onions, mozerella, fetta, chedder. Ummm, I think I had some EXTRA inspiration while making this one. Yah..I did. :0)

Cookies and Cream

I have had this recipe sitting in my Purple recipe book and it took Lyn visiting for these cookies to manifest.

I thought it would be difficult but it was fairly simple. The hardest part was mixing the cream, as my hand held mixer decided to croak. Yep, died right in my hands. In pain at that.

so I had to kinda whip the cream in my own special way, but we got it done!










Debra Lyn insisted in taking a taking Picture of me as I constructed the cookies, she said I was an artist at work. She's cute, and she made me feel like a pro.

Sometimes it just feels so natural when everything just comes together. I get inspired by that fact that even though I bake and cook Gluten Free, that doesn't mean it should be any less flavorful. Trust me these has just as much chocolate and cream goodness you could get from those store bought Oreo's. I even dipped them in milk!

As you can see from my dirty Apron I have a tendency to get messy. LOL

Busy Little Worker Me

I have to admit that I am some what disappointed in my lack of enthusiasm with my posts. It's not that I don't love to bake/cook, it's just smashing everything into one day. Completing it all can be over whelming.
Ok enough of a rant, lets talk FOOD.

Over the past couple weeks I have tried to, at least, once a week make something new. I have sooo many recipes just waiting to be whipped up. Most of the time when I decide on what I will concur <--(pokes chest out, chin up, nod!) all come from what I have in the house.
The "inspiration" for the Banana Creme pie was three bananas in a bowl on my kitchen table screaming, "PLEASE DON'T WASTE US, WE CAN BE USED FOR SOMETHING TASTY AND GLUTEN FREE" originally I was going to just make Banana pudding. Fast forward tome standing in the gluten free isle at Wegmans, seeing someone place the last box of Gluten Free Cinnamon Graham crackers down<-- Insert FATE and instant inspiration! I knew right there I was going to go home and make something divine. Hence the final master piece. See above!


Vietnamese Summer Rolls

Now my next project came with the help of my Preggers bestfriend, Lyn. Having a prego around helps with the inspiration, and dissolves any guilt you may have while consuming too much food. I say the sympathy I was having for her hunger made me eat more. Just a thought.
We love, love, love to eat PHO, and whenever we get Pho, Summer Rolls are a must. This Recipe is very simple to make, just a little time consuming. I find it rather difficult to not munch on one or two while you're doing all that stuffing and wrapping. As you can see my rolls are rolled a little more neatly.Clears throat with a slight tone of accomplishment, I was under the influence of some "medication" so I was bent on making them look perfect. This "medication" helps me to focus, and my impatientness diminished. Now there is usually a Peanut Sauce that goes with the Rolls, but thanks to the forgetfulness I have I didn't have any GF soy sauce. I tried to whip up some kind of peanut sauce using peanut butter, Roster Sauce and some other ingredients. Wasn't like the Pho places, but it was interesting.

Poppy Seed Lemon Bread
Again I have my resources around the house, and
preggers Lyn to thank for this one. I am a huge fan of lemon and poppy seeds! This bread was absolutely amazing. Next time I will have to go less on the lemon glaze, it was just a tad too tart. Even with the slight tang bite to it, the bread was so moist. Crispy crust and moist warm inside. My mouth is literally watering as I type this. I can't wait to visit my family to have them try out all my new goodies.

I Love it when I See "that"



Seems like everywhere I go I see my too favorite words. GLUTEN FREE! How excited I become when I know that I can eat something with out becoming violently ill. NO sir, Bubble guts you are not welcome in this tummy of mine! More and more food companies are beginning to put Gluten Free on their products. I guess they are finally realizing how many people are living with Wheat/Gluten allergies, and how much labeling can assist their customers.
So thank you and thank you V-8 You have made my life just a little less stressful.

Cupids Cups





So I thought that I would be adventurous and bring some Gluten Free Lil' Bee (tm.)
Red Velvet Cupcakes to work for my coworkers.This began as a wonderful idea, then quickly turned it to a game of, "How Many times will I have to go back to the Store to get the stuff I forgot?" It was only twice, but after being up since 4:30am twice was too many! After all the complications of memory loss on my part, which I could blame on my youth still I am too young for that excuse, things finally came together.This is a recipe that I have used several times and is a very simple to make and just as simple to gobble up! These Red Velvet Cup Cakes are so moist and sweet no one can possibly tell that they are GF! I used My Pampered Chef Easy Decorator to ice them, and some simple accessories. I had to make sure all of my fixins were GF so I called Wilton and was assured that the sprinkles and the food coloring gel was indeed GF. SCORE! I read and picked out each of the hearts that I placed on the cupcakes. Insuring that what the message read was clear to be seen, and sent with my TLC >
Everyone enjoyed them and since I have a tendency to make WAAAY more then necessary I had to make some deliveries. I have a official test tester, who shall remain nameless for now. Let's just say she makes baking for me a million times more fulfilling when she reassures me everything is yummy! Wink Wink, AS WELL!

Even though I am not yet<--(emphasis on yet) a professional at this baking thing I love what I am doing. What I do know is that to me I am just not baking, I am expressing myself and my soul through each tin I fill with love and batter<--ok a little corny but it's how I feel. I love to cook and I love to watch people enjoy what I have created for them! I am just a creators creator! So with time and research I will become more and more creative! I am soo excited!!
I promised myself I would really start blogging about all of the goodies I have been whipping up in the kitchen. I have soo many pictures to share and stories so stay tuned..

Just one of those days

Oh boy it's just been one of THOSE days. You know, the day when nothing seems to go right.From the moment you wake up you know that it will take forever until you're back in your bed, bundled up nice and tight in the arms of the one you love, not worrying about what tomorrows troubles will be. Yah, one of those days. The day where you feel fat, swear you look horrible, hate your shoes, can't stand your clothes, and if that stupid bitch that sits in the corner cube asks you one more question you will go straight MENTAL on her! Yep, one of those days. The type of day that if you could walk out of work drive your car off a cliff, lite a spliff, and chuck the deuces to all responsibilities! Today would be that day!
Now I have had hard days. These days seem to be nothing new to me, but today I just needed a break from the norm of rotten days. Is it wrong that I dream of walking in the door to dinner cooked, candles lit and a bath running with bubbles bursting in the air as my topless man pours me a chilled glass of White Wine? now that is a STRETCH maybe a bit extreme. I crave surprise and I lust for a fantasy life. Something that you see on Real House wives, or Hoarders..?? JK.. just wanted to make sure I didn't lose you. For real though <--said in my ghetto voice, today was stressful!
I guess what makes all the stress worth the hurt is when your son greets you at the door with a Nerf attack.Screaming and yelling with his sidekick mutt dog at his side.The screeching of the Falsetto dog barks,war commands of Nerf battles being called out and bullets whizzing past coming at you faster then you can blink are your greetings.You just stand there in the line of fine, taking it all in. After all the bullets have settled, he grabs your stuff and puts it down. Wraps his arms around you and demands a hug and a kiss. Looks you in the eyes, with those baby eyes you know sooo well, and tells you he loves you and asks you how your day was. That very moment the raggedy car, the stupid bitch, and your appearance all seem to instantly dissipate.

Yet waiting around the corner is just another travesty trying to inch it's way back into your happy space. So to you MR. Negativity I say, EAT SHIT.. and make sure it's gluten free..

Time to switch it up

So I've been neglecting myself over the past few months in a way. Communicating. Hey even if no one is listing I have something to say, so lets talk. *Taps on microphone "Can you hear me in the back? Ok good!" I thought that I was just going to dedicate this blog/space for gluten free cooking and baking, but I have so much more to say. I thought I would try to clean it up, sorry I've had a change of mind. First off, I can't spell, and if it weren't for spell check I would've never made it thus far. I am not stupid, just a little illiterate. Sad, I once wanted to be a writer. Still have that wish deep down inside.. shhh don't tell my future editor!
I will take this space to talk about my daily life, all along the way inviting you all (or just myself) into my life as a member of the Celiac Family. I will not, and I repeat will not say that I am perfect by any means, when it come to eating gluten free. Do I inspect everything that goes in my mouth? NO! (That's what she said-sorry I couldn't help myself) I make mistakes along my road to Gluten Free living. Have I intentionally ate something knowing good and well it was a Glutionious Poisonous Chocolate Chip cookie * shrieks heard in the distant back ground* Yes I have. Did I pay for it shortly after? Of course I did. With that said, I still am learning.
One thing I do know is I love to cook, and this "blessing" of being Gluten free is a HUGE part of my life. If I can help someone or educate people about what I do know then I am doing my little part.
